Can I bake the chicken instead of frying?

You can, though it won't have the same crispy texture. Bake at 400F (205C) for 15 to 18 minutes, or pan-fry in less oil if deep-frying feels like too much.

What if I don't have a wok?

A large heavy skillet or Dutch oven works just as well. You need enough depth to fry the chicken safely.

Can I make this ahead?

Cook the chicken and make the sauce separately, then combine just before serving. The chicken stays crispier this way. Both keep in the fridge for up to 3 days.
