Watermelon Lemon Slush

This watermelon lemon slush blends frozen watermelon, fresh lemon juice, and a touch of honey into an icy summer drink ready in 5 minutes with just a blender. Summer in a glass. Pink, icy, and completely shameless about its lack of nutritional complexity. This is what watermelon was invented for. Serve it alongside our West African-style lemon pepper chicken for a backyard cookout.

Instructions

1

Add frozen watermelon cubes, lemon juice, honey, and water to a blender and blend on high until smooth and slushy, about 45 seconds.

2

If the mixture is too thick, add a bit more water or ice cubes and blend again until you reach your desired consistency.

3

Divide crushed ice between two tall glasses and pour the slush over the ice.

4

Stir well, add a straw, and garnish with a fresh watermelon wedge or lemon slice.

Zesty Tip: Prep watermelon cubes and freeze them the day before so they're ready anytime you want an instant slush. You can also use fresh watermelon and add 1 cup of ice to the blender.

Questions people actually ask

Can I use fresh watermelon instead of frozen?

Yes, use 2.5 cups of fresh watermelon cubes and add 1 cup of ice cubes to the blender for the same frosty texture.

Is this vegan if I use agave instead of honey?

Absolutely. Agave nectar works perfectly as a 1-to-1 replacement for honey.

How do I keep this from getting watery as it melts?

Serve immediately after blending, or make the slush base and keep it in the freezer, then blend with fresh ice just before serving.
