Add roughly chopped cucumber and mint leaves to a pitcher. Gently muddle them together to release the flavors, being careful not to crush the mint leaves too hard (you want to bruise them, not pulverize them).

Pour in cold water and fresh lemon juice. If you want the drink slightly sweet, add honey or agave and stir until dissolved. Taste and adjust lemon juice or sweetness as needed.
